Orange Cucumber, Avocado Salad with Pomegranate

Dressing

Juice of 1 lemon

2 Tbs redwine vinegar

1/4 Cup extra virgin olive oil

1 tsp Aleppo pepper flakes or any pepper flakes you have (Optional)

Kosher salt & black pepper

Whisk all ingredients in a small glass bowl and set aside

Salad

3 Cups baby greens or spring mix

3 Oranges, peeled, sliced into wheels

1/2 Large cucumber, half length wise and sliced into half moons

2 Avocados, pitted and cut into wedges or large dice

1 Vine ripened medium tomato cut into wedges

1-2 Large shallot thinly sliced

1 Cup pomegranate seeds

1/4 Cup mixed herbs (basil, mint, cilantro) or just a herb of your preference

1/4 Cup feta or goat cheese crumbled (Optional)
